Better Than Butter
Many Italian and Mediterranean restaurants serve their bread with a small dish of olive oil instead of butter. This heart-healthy practice is one you can easily use at home. In fact, there are many other ways you can substitute olive oil for butter:
- Drizzle a little olive oil over hot vegetables, such as steamed broccoli or asparagus, and even corn on the cob.
- Fry or scramble eggs in a small amount of olive oil.
- Use olive oil to baste poultry before roasting.
- Dip crab or lobster meat into heated olive oil instead of melted butter.
Butter is high is saturated fat, which is associated with high blood cholesterol levels and heart disease. Olive oil is high in monounsaturated fat, widely considered the "healthiest" dietary.
