Don't underestimate the nutritional value of mushrooms. Certain types, such as shiitakes, are rich in phytochemicals, which are known to fight some cancers.

The nutritional profiles of mushrooms vary from type to type, but many include protein; vitamins A, B and C; and minerals including iron, selenium, potassium and phosphorous.

And now that grilling season is almost upon us, don't forget that the larger and heartier mushrooms -- such as shiitake, porcini, and Portobello -- make excellent grilled side dishes or entrees.
